MENU OF THE MONTH    
       APRIL
            HONEY-BAKED CHICKEN                                           SERVES 4                           
                 
(Excerpt from "Fifty Nifty.....5 Ingredients or      
Less Main Dish Recipes")                                             

4 boneless, skinless chicken breasts                           Arrange chicken in sprayed 9 x 9" or
1/3 cup melted butter                                                11 x 7" baking dish. Mix the rest of the
1/3 cup honey                                                             ingredients and spread over the chicken.
1 tablespoon prepared mustard                                 Bake 1 - 1 1/4 hours, or until done,  
1 teaspoon salt                                                          basting chicken occasionally.
Dash pepper



              
           QUICK MIXED SQUASH                                               SERVES 4

 Microwave Recipes")

1 pound mix of yellow squash            Slice squash and zucchini into a 1 1/2-quart
 and zucchini                                  micro-safe casserole dish. Top with the next
1 purple onion, thinly sliced              2 ingredients. Cover and cook on high heat                         
1 red bell pepper, chopped                2-4 minutes, until crisp-tender.  Stir, then                           
1/4 teaspoon dried basil                    cook 2 minutes more. Stir in the basil and                           
     Salt & pepper to taste                  S&P. Sprinkle with the Parmesan. Cover and
1/4 cup grated Parmesan                    let stand about 2 minutes; serve.

        SESAME KNOTS                                                              MAKES 8                             

(Excerpt from "Fifty Nifty.....
5 Ingredients or Less--
Quick Breads")                                         Heat oven to 350 degrees.

1 11-oz. can refrigerated bread sticks      Separate dough and loosely tie each piece of
2 tablespoons butter, melted                  dough into a knot or small pretzel shape; place
1 teaspoon sesame seeds                          1" apart on an ungreased baking sheet. Brush
                                                             knots with the butter and sprinkle with the
                                                             sesame seeds. Bake 15 minutes, or until golden.  
VERY FAST MOUSSE                                                         SERVES 4

Quick and Easy Desserts")

Beat 2/3 cup chocolate syrup with 1 cup of whipping cream and 1 tablespoon of brewed
coffee or orange liqueur until soft peaks form. Chill until serving time.
